Sourdough Chiffon Cake Workshop

In this 1 1/2 hour workshop, you will learn how to make and decorate a light and airy sourdough chiffon cake using fermented einkorn flour, mascarpone frosting, and edible flowers and fruit. Discussion will revolve around the fermentation of cakes and pastries and will focus on critical points of the process including beating and incorporating the egg whites, baking observations, and proper cooling techniques. This is a fun and playful workshop that will allow for flexibility of baking styles using a tube pan, three 9-inch cake pans, or a large rectangular cake pan.
