In this workshop, you will learn to mix and bake fragrant stollen, made with California grown and stone milled flours, candied local citrus, nuts, and marzipan. We will discuss using sourdough leaven and yeast in enriched breads, and how to adjust this approach to your own kitchen, schedule, and leavening preferences and regional flours. While the dough is proofing, we will bake decorative and delicious wholegrain cookies to fill a holiday box. These treats are wonderful for gifting or to enjoy in the month to come!

This workshop will take place in a historic farmhouse commercial kitchen. Afternoon snacks and beverages will be provided. All participants will take home recipes, a stollen, a box of mixed variety cookies, and candied citrus to use in your bakes at home.

What to bring: an apron, notebook, and a curiosity for learning!
