Whole Grain Ciabatta Zoom Workshop

In this 1 1/2 to 2 hour virtual workshop, learn how to make delicious whole grain flatbreads using spelt flour and natural leavening, and baked in a home oven. Sarah will demonstrate the various stages of mixing, shaping, proofing, and baking as well as how to adapt the foundational recipe to use various other stone ground whole grain flours depending upon their needs. Emphasis will be on adjusting hydration to achieve the bread characteristics you desire using regional grains and tricks for achieving a fool-proof rustic-style bread. Questions are encouraged and a link to the recording will be sent within 24 hours of the workshop's end.
