Whole Grain Ka'ak al Quds Zoom Workshop (Jerusalem-Style Bagels)

In this 1 1/2 to 2 hour workshop, learn how to make these delicious, soft and airy oval flatbreads made from stone ground whole grains and coated with any number of toppings. Sarah will demonstrate all stages of mixing, shaping, coating, proofing, and baking. Discussion will revolve around the nature of the whole grains used and how to adapt the recipe to other regional flours. Sarah will also discuss her experiences baking in Lebanon and Turkey where she first learned of this bread, food security issues with the current crisis in Ukraine, and the significance of this style of bread throughout the Middle East. Questions are encouraged and the workshop will end with the best ways to eat these unique breads as a transportable snack, breakfast food, or accompaniment to a mezze-style brunch.
